Albuquerque has it better than almost anyone. We ship these out to other states to roast locally.

This time of year one of our grocery stores ships pounds and pounds of hatch chiles from New Mexico. You can buy them fresh but they also have a chile roasting day where they roast a crap ton and you can buy them that way. This is in NC.

My mom is from Abq, and we used to visit family there a couple of times every year. Chili roasting season was always one of my favorite times of year to visit.
Unfortunately, I haven’t made it back in the last 5 years (as my grandma there passed away during covid). Once my kid is a bit older and traveling is easier, I’ll take my family there for a vacation and will prioritize chili season.
In the meantime, I grow Big Jim’s at home (Minnesota) and roast/freeze them every summer, just to scratch that itch.

Very addictive, because they add such a unique but not overwhelming flavor to everything. From here, I take off the rest of the skin, lay them out on a cookie sheet, put them in the freezer to then bag and use individually when needed.

It’s something that those who don’t live in the southwest don’t understand. I’m in Colorado so there is a “turf war” between Pueblo chiles and Hatch lol. They’re all good in my book.
One of my favorites is throwing a bunch on a cheeseburger with a bunch of jack or meunster cheese. Or make rajas con queso tamales, or even just simple chiles and cheese quesadillas.
And they definitely are addictive. One of my favorite smells is chiles roasting.

Once I had a few left over. I roasted, peeled, and chopped them up and put them in some sausage gravy I was making for my breakfast. I won’t make it any other way now.
